Four Foot Curling Camp
Last summer I went to the Four Foot Curling Camp in Kelowna BC. Loved it! The camp is intended for all levels and has top class instructors. Last summer the instructors included Rachel Homan and Renee Sonnenberg. There were also people there frpm around the world which was pretty cool - Seattle, San Francisco, India, Brazil, Hungary, and England. And best of all the camp is followed by a summer bonspiel on the weekend where you can try out your new found skills. The bonspiel is not part of the camp. I've attended the camp at Curl Moncton, runs in August, and there are several levels. I found it very fun and also very helpful for my game, both in terms of skill improvement but also in terms of overall game play (mental aspects, nutrition, fitness, etc). I highly recommend it.

Dave Gravelle runs a top-notch curling camp (Google Hotshots). Mostly aimed at curlers with 0-5 years experience. It is held at the Oakville CC near Toronto. Occasionally held at US curling clubs as well.
I've been to it and (with their blessing) borrowed heavily from their curriculum for our Curling School in Utica. They basically taught me now to curl properly. Dave always has a good stable of curling pros and taskmasters to whip your curling into shape. My favorite memory is an angles clinic with John Epping. Best 20 minutes ever spent on the ice. (I use that one too.)

A second vote for the summer curling camp in Moncton
My wife and I attended the 5 day summer camp a few years ago, and it was brilliant. Top notch instruction (including quite a bit of time spent with Russ Howard and Mary-Anne Arsenault), nice facility, and a great town to spend the evenings in. In the adult section, skills ranged from club curlers to a few provincially competitive teams that came as a unit. All were welcome.
Looks like week one is sold out, and week two is likely going fast.
